Quick recipe finder Brownie and peach knickerbocker glory

Ingredients
- 3 ready-made brownies, broken into pieces
- 100g/3½oz mascarpone
- ½ vanilla pod, seeds removed
- 15g/½oz icing sugar
- 50ml/2fl oz double cream, whipped
- 1 peach, skinned and cut into cubes
- sprig of fresh mint, to garnish
Method
Place half of the brownies in a tall ice cream glass.
Place the mascarpone, vanilla seeds and sugar in a bowl, mix well and fold through the cream.
Place half of the mixture onto the brownies and top with half of the peaches.
Repeat with a layers of brownie, mascarpone mixture and peaches.
Garnish with mint and serve.
