Ingredients

• 3 ready-made brownies, broken into pieces
• 100g/3½oz mascarpone
• ½ vanilla pod, seeds removed
• 15g/½oz icing sugar
• 50ml/2fl oz double cream, whipped
• 1 peach, skinned and cut into cubes
• sprig of fresh mint, to garnish

Method

1. Place half of the brownies in a tall ice cream glass.

2. Place the mascarpone, vanilla seeds and sugar in a bowl, mix well and fold through the cream.

3. Place half of the mixture onto the brownies and top with half of the peaches.

4. Repeat with a layers of brownie, mascarpone mixture and peaches.

5. Garnish with mint and serve.
