Quick recipe finder Marinated courgette, lemon, gorgonzola and sesame salad

Ingredients
- ½ courgette, finely sliced
- 2 tbsp extra virgin olive oil
- ½ lemon, juice only
- 55g/2oz gorgonzola (or a similar vegetarian blue cheese), crumbled
- 1 tbsp chopped fresh coriander leaves
- 1 tbsp chopped fresh mint leaves
- 1 tsp sesame seed, to serve
Method
Combine all the ingredients except the sesame seeds in a bowl and mix until combined.
Leave to marinate for 5 minutes.
To serve, sprinkle over the sesame seeds.
