Ingredients
- ¼ fresh white peach, cut into 2 wedges, plus extra to garnish
- 10 fresh mint leaves, plus extra sprig to garnish
- 2 tsp sugar syrup
- 50ml/2fl oz bourbon whiskey
- ice cubes
- splash champagne
Method
Place the wedges of white peach and the mint leaves into a cocktail shaker and crush lightly (muddle) with a long-handled spoon.
Add the sugar syrup, bourbon and ice and shake well.
To serve, strain the mixture into a tumbler and top up with the champagne. Hook a wedge of peach and a sprig of mint over the edge of the glass.
