Ingredients
- ½ cucumber, sliced in half lengthways, seeds scraped out using a teaspoon
- 20g/¾oz apple, grated
- 20g/¾oz carrot, grated
- 20g/¾oz cooked beetroot, grated
- 30g/1¼oz cream cheese
- 15g/½oz raisins
Method
Cut the cucumber into four pieces.
Mix the apple, carrot and beetroot together in a mixing bowl. Stir in the cream cheese until well combined.
Fill each piece of cucumber with a little of the cream cheese mixture.
Sprinkle each filled piece of cucumber with raisins. Wrap separately in cling film and chill in the fridge until needed.
